No-Bake Raw Coconut Cashew Tahini Bars
Health kicks or diets can get crazy. A lot of us have been there: you decide to gung-ho cut out a ton of food groups, maybe specifically sugar or dessert, and then realize it is all you can think about. As someone with a serious sweet tooth but also a secret side love affair for all things salty, I combined the two with my new obsession over tahini and made the perfect healthy-fied dessert. No-bake raw coconut cashew tahini bars. Pop these babies in your freezer and have on hand for when you just need that extra something.
Ingredients: For the base layer:
Dates (4)
Walnuts (½ cup)
Cashews (¼ cup)
Coconut oil (spoonful)
For the filling:
Cashew butter (½ cup)
Tahini (¼ cup)
Coconut oil (spoonful)
Coconut (¼ cup + extra for topping)
Cinnamon
Salt
Directions:
Place the dates in a cup of warm water for ~5 minutes until they soften
In a food processor, combine all of the base layer ingredients: 4 softened dates, ½ cup of walnuts, ¼ cup of cashews, and a spoonful of coconut oil
Pulse until it has formed a dough like consistency
Scoop the mixture out of the food processor and into a parchment lined bread pan
Place the pan in the freezer for ~10 minutes and begin making the filling mixture
In a food processor, combine all of the filling ingredients: ½ cup of cashew butter, ¼ cup of tahini, a spoonful of coconut, ¼ cup of coconut, and a dash of salt
Once smooth, pour this mixture over the base layer in the bread pan
Sprinkle the extra coconut on top and place in the freezer for ~15 minutes
Once frozen, pop the parchment paper out of the bread pan and cut into 1-2 inch bars
Place the bars in an air tight container in the freezer and store there until ready to eat
