Grilled Whole Head of Cauliflower

If there is one thing I dislike about living in Manhattan, it is the accessibility to outdoor living space. Sure, I walk majority of the places and there are plenty of rooftop bars to spend time on or parks to hangout in, but I crave the ability to open a door (from my apartment) to some type of grassed area. It could be a 2x4 foot space for all I care; just the ease of opening a door to the outside space would fill my needs. That and, of course, the space to put a grill. To me, grilling is the easiest, most versatile, and most important kitchen appliance that exists. Everything, and I mean everything, tastes better when cooked on a grill. That is why, the second the summer starts and I begin spending time at my parent’s house at the shore, I make an effort to cook everything I consume on the grill. Obviously not every morsel of food, but you’d be surprised… I am always surprised when I receive feedback from my community regarding the meals I cook on a grill and hear how intimidating some find it. In my mind, there is nothing easier! Truly, the appliance does all the work. Because of that, I decided to start a #girlswhogrill series, where I showcase some behind the scenes footage of my constant grilling on my Instagram stories. The first dish I included on here, which happened to be something I had never made before and quite random in my honest opinion, was this whole head of cauliflower. I saw my mom had it on the kitchen counter as part of her dinner grocery haul and the idea immediately came to me. It was as if the cauliflower was asking to be grilled. So, I did just that! Slathered this beauty up with all sorts of flavor and popped it on the grill to get that nice char we all love so much. Let me just say, this was delicious, and one of my new staples for any BBQ sides in the near future. If you’re intimidated by the act of grilling and the fear that you won’t know when your meats are cooked through, this vegetable is the perfect place for you to start!


Directions:

  1. Turn on the grill and allow it to heat to ~500 degrees

  2. In a bowl, combine the avocado oil with all of the spices and whisk together

  3. Slather that mixture on to the heads of the cauliflower rubbing it in with your hands

  4. Place the whole heads of cauliflower on the grill, flat side down, with the burners on medium heat

  5. Cook on the grill, closed, for ~25-30 minutes until the bottoms are charred, the top is browned, and the interior is softly cooked through

  6. Remove the cauliflower from the grill, slice up into florets, top with some tahini, and serve hot
