This might sound crazy and all considering part of my business is creating recipes for this blog, but I am a very untalented baker. Yep, I said it. I strugggleeeee. I’ve always made it very clear to my audience that I am not the person to turn to for an endless array of baked goods or dessert options. That just is not my strength! Plus, I always preach to focus on what works for you, so why wouldn’t I do the same? That is why I am utterly astonished by the result of this coffee almond butter banana bread and extremely proud to share this recipe with you all.

The other day while I was listening to my latest obsession, Gabby Bernstein’s Super Attractor on audible (highly recommend), I realized that I had a few ripe bananas sitting on my counter. Determined to finally feel like an accomplished food blogger and actually create an edible and enjoyable banana bread, I decided it was time to try baking (yet again). Now, let me explain to you why I do not like baking. I, surprisingly, hate following rules in the kitchen. If you put a recipe in front of me, I’ll take a look at it, use it as a loose suggestion, and do whatever I please. I’ve never been a recipe follower and I don’t think I ever will. Usually, what I make in my kitchen turns out delicious and I am fine winging it. However, that is not the case with baking. Baking is a god damn science and cooking is an art. No surprise, I was never good at science. Even when I’m given a freaking recipe for a banana bread, fully knowing that if I change the ingredients or steps it will not turn out correctly, I do just that. Anyway, you get the point…

 I looked around my kitchen, grabbed what I had in stock, and decided that today would be the day. I’d really pay attention to each ingredient going into the bowl and I would write everything down to reference later if it was a success. Well… GO ME! Because this banana bread rules (if I do say so myself). The coffee extract, which was an incredibly random addition but a decision quickly made when I realized I was out of vanilla extract and it was sitting next to the empty jar, adds the perfect touch to make this loaf an ideal breakfast bread. For me, I love a hearty baked good in the morning. However, a lot of breads and/or muffins are just glorified cake without the icing. Let’s be honest here and call it what it is, okay? This bread, however, is basically a different form of my ingredient list for my stovetop oatmeal with the addition of eggs. I’d say it is breakfast approved! Slather on some additional almond butter, top with some honey and bananas, or eat plain. All versions will be delicious! You can’t go wrong with this one, I promise.

ingredients:

Wet Ingredients
  • Banana (2) – ripe
  • Eggs (2)
  • Almond milk (1/4 cup)
  • Coconut oil (1/2 teaspoon)
  • Almond butter (1/4 cup)
  • Coffee extract (1/2 teaspoon)
  • Maple syrup (1 tablespoon)
Dry Ingredients
  • Oat flour (1 cup)
  • Almond flour (1/2 cup)
  • Cinnamon (1 teaspoon)
  • Baking soda (1/2 teaspoon)
  • Baking powder (1/2 teaspoon)

instructions:

How to cook Coffee Almond Butter Banana Bread

  1. Mash the two ripe bananas in a large bowl
  2. Add the remainder of the wet ingredients to that bowl and combine well
  3. In a separate bowl, combine the dry ingredients
  4. Pour the dry ingredients into the large bowl of wet ingredients and combine
  5. Pour the batter on to a parchment lined baking sheet and place in the oven at 375 degrees for 25 minutes
  6. Remove, allow to cool, and slice before serving
