Cinnamon Apple Cake

By now you guys are well aware of a few things: I love all things fall flavors, I’m a cinnamon addict, and I dont consider myself the best baker. Since baking is way more of a science than an art and requires you to actually follow the rules, something I (shockingly) do not enjoy to do in the kitchen, I am constantly messing things up. However, this cake is an absolute win and I know you all will love it. Thanks to the Simple Mills limited edition apple cinnamon muffin mix, this baby is packed with fall flavors. Plus, I obviously added some flare and touch to make it extra Freckled Foodie approved.

To make, I followed the box instructions with a few caveats. One, I subbed applesauce for two of the eggs (1/4 cup of apple sauce per 1 egg) mainly because we were running low on eggs, but also because I wanted to provide that extra apple flavor and more of a dense/mushy cake substance, which I personally love. I also added in some sauteed cinnamon/nutmeg apples to both the mix and on top of the cake. While the mix definitely packs some flavor, I wanted some chunks of real apple with every bit. Plus, I love the scent of sauteed apples in our kitchen, it truly screams FALL IS HERE.

Once I had the mix ready to go, I popped it in a cake tray and in to the oven it went. Once finished baking, I topped with the rest of the apples and then also a yogurt drizzle, which I made by thinning some vanilla yogurt with a bit of water. This guaranteed a bit of creaminess with every bite but, to no one’s surprise, I obviously served this alongside some vanilla ice cream for the full effect. Heck, it was my #dailydoseofdessert and it was amazing. Don’t sleep on this one! It is the perfect Thanksgiving or Friendsigving dessert for this holiday season.

Cinnamon Apple Cake

Ingredients

  • Simple Mills apple cinnamon bread mix (1 box)
  • Apple (2)
  • Vanilla yogurt (1/4 cup)
  • Egg (1)
  • Apple sauce (1/2 cup)
  • Coconut oil (1/4 cup + 1 tablespoon)
  • Water (1/2 cup)
  • Vanilla (2 teaspoons)
  • Cinnamon (1 tablespoon)
  • Nutmeg (2 teaspoons)

Instructions

  1. Chop the apples into ¼ inch pieces and toss in a bowl with 2 teaspoons of melted coconut oil, 2 teaspoons of cinnamon, and 1 teaspoon on nutmeg
  2. On a hot skillet, add 1 teaspoon of coconut oil and sauté the apples for ~10 minutes, or until they soften and remove from the heat and set aside
  3. In a bowl, combine 1 egg, ½ cup apple sauce, ½ cup water, ¼ cup melted coconut oil, 1 teaspoon of vanilla, 1 teaspoon of cinnamon, and 1 teaspoon of nutmeg
  4. Whisk the ingredients in the bowl well and then add in the Simple Mills apple cinnamon bread mix and combine well
  5. Add in ¼ of the sautéed apples to this mixture and combine well
  6. Pour into a cake pan and bake in the oven at 325 degrees for around 30-35 minutes, or until fully cooked through
  7. Remove from the oven and pour the remaining sautéed apples on top
  8. In a bowl, combine ¼ cup of vanilla yogurt with 1 tablespoon of water and mix well to thin the yogurt
  9. Splatter / drizzle the yogurt on top
  10. Serve hot alone or alongside vanilla ice cream
