Blueberry Crisp

As you know I am a big dessert person and, in the summer, I love fruit-focused dessert. This is the perfect option to serve at a dinner party as you can prep everything beforehand and then simply reheat when it is time for dessert. Plus, who doesn’t love the combination of ice cream and a berry crumble.

I forgot to take a photo of the end result, so please settle with this random photo of the blueberries being mixed!

Blueberry Crisp

Ingredients

Base
  • Blueberries (6 cups)
  • Lemon (1)
  • Oat flour (2 tablespoons)
  • Sugar (1 tablespoon)
Topping
  • Rolled oats (1/2 cup)
  • Oat flour (1/2 cup)
  • Sugar (2 tablespoons)
  • Brown sugar (2 tablespoons)
  • Chopped almonds (1/4 cup)
  • Cinnamon (1 tablespoon)
  • Butter (1/2 stick)

Instructions

  1. Mix the base ingredients in a baking dish
  2. Combine all of the topping ingredients in a bowl and mix with your hands until it is well combined in small clumps
  3. Pour the topping mixture on top of the base and spread evenly
  4. Bake in the oven at 350 for 30-40 minutes or until the top is slightly browned
  5. Serve alongside vanilla ice cream!
