When I first got my air fryer, I cooked just about everything in it. I couldn’t get enough! After being separated from one of my favorite recent kitchen appliances for the past few months, I finally brought it home from our apartment to my parent’s house and suddenly had the desire to make every meal in it. I mean, quite literally everything. I even air fried pineapple. Yes, it did in fact rule.

After seeing a few innovative new recipes on TikTok highlighting air fryer dishes, I decided to give it a spin with some foods I had never tried cooking in there before. Enter, salmon. I didn’t want to make just any kind of salmon though, I was suddenly craving a deliciously sweet and flavorful maple glazed salmon. Something I, shockingly, had never made before. To make the maple glaze I combined maple syrup, lemon juice, brown sugar, avocado oil, garlic powder, and salt and pepper.

The best part about cooking this dish in the air fryer is that you really just throw everything together, pop it in, and wait. I wanted to pair this with some veggies that I love to eat alongside salmon so I went with some classics: broccoli, mushrooms, and asparagus. This dish came together so well and was even better than I could have ever even imagined. For anyone with an air fryer, get on it!

Air Fryer Salmon & Veggies

My new favorite style of salmon

Ingredients:

  • Salmon (4 individual filets)
  • Mushrooms (3 cups)
  • Asparagus (1 bunch)
  • Broccoli (2 small heads)
  • Lemon (1)
  • Maple syrup (1/2 cup)
  • Avocado oil (2 tablespoons)
  • Brown sugar (1 tablespoon)
  • Garlic powder (1 teaspoon)
  • Salt (2 teaspoons)
  • Pepper (2 teaspoons)

Instructions:

  1.  Cut the broccoli, asparagus, and mushrooms into ½ inch pieces and place in a bowl
  2. Season and combine the chopped vegetables with 1 tablespoon of avocado oil and 1 teaspoon each of salt & pepper
  3. Place the seasoned vegetables in the air fryer basket
  4. In that same bowl, combine the juice of 1 lemon, ½ cup of maple syrup, 1 tablespoon of avocado oil, 1 tablespoon of brown sugar, and 1 teaspoon each of garlic powder, salt, and pepper
  5. Whisk that mixture together into a sauce
  6. Place each salmon filet into the bowl of that sauce to coat both sides of the fish
  7. Place the salmon, skin side down, on top of the vegetables in the air fryer basket and top with the remaining sauce
  8. Place in the air fryer at 420 degrees for 20 minutes
  9. Remove from the air fryer and enjoy!
