Stove Top Oatmeal with Cinnamon Apples
There is something incredibly warming and comforting about a nice big bowl of stovetop oatmeal. Between the ease of the cooking process, the smell that fills your kitchen, and the physical warmth that fills each bite, it makes me feel all sorts of cozy inside. Although primarily a cold weather dish, it is something I enjoy all year round. In theme with the heat of the oats, I love to top mine with fruits of the similar temperature - fresh off the sauté pan with all of my favorite spices. Sure, I can write home about my love for almond butter and banana as a topping for any type of bowl, but when I want to cuddle on the couch with a blanket and feel all sorts of "Sunday morning" vibes, there is no better combination for this stovetop oatmeal than stewed cinnamon apples. Truly, my heaven. Perfect for a lazy weekend morning with a book or netflix, or as a pre-prepped breakfast for the office. No matter where you're eating it, the comfort will commence.
Ingredients (makes 2 servings):
Apple (1)
Milk – plant based or regular (1 cup)
Steel cut oats (1/2 cup)
Rolled oats (1/2 cup)
Collagen peptides or protein powder (1 scoop)
Almond butter (2 tablespoons)
Coconut oil
Vanilla extract
Hemp seeds
Chia seeds
Cinnamon
Nutmeg
Allspice
Directions:
In a pot, bring 1 cup of milk and 1 ¼ cups of water to a boil
Add ½ teaspoon of vanilla extract, 2 tablespoons of almond butter, and 1 scoop of collagen peptides into the pot and stir to combine
Lower the heat to low-medium and add in the ½ cup of rolled oats and ½ cup of steel cut oats
To that mixture, add in 1 tablespoon of chia seeds, 1 teaspoon of cinnamon, ½ teaspoon of nutmeg, and a dash of allspice
Combine the mixture with a spoon and cook, covered and stirring occasionally, until all of the liquid is absorbed
While the oatmeal is cooking, chop the apple into ¼ inch pieces
On a hot skillet, add ½ teaspoon of coconut oil and then add the apples with a dash of cinnamon and nutmeg
Sauté the apples, while stirring, for ~5-10 minutes or until cooked through
Pour the oatmeal into a bowl and top with the sautéed cinnamon apples, 1 teaspoon of hemp seeds, any additional almond butter you want, and enjoy
