Gluten Free Oatmeal Raisin Cookies

Ever since saying hello again to my dessert addiction post Whole30, I have been craving oatmeal raisin cookies. Unsure why, but I legitimately couldn’t get them off my mind for three days straight. Instead of filling this need for sweets void with more chocolate and my freezer full of DF VL ice cream, I decided to give my heart what it wanted. It was time to create a GF & DF oatmeal raisin cookie recipe. Good lord, what the F took me so long!? These delicious pillows of heaven seriously satisfied my craving and then some.

Ingredients (makes 12 cookies):

Wet Ingredients:

  • Ground flaxseed (2 tablespoons)

  • Almond milk (½ cup)

  • Vanilla (1 teaspoon)

  • Ghee (1 tablespoon) - melted (omit if Vegan)

  • Coconut oil (¼ cup) - melted

Dry Ingredients:

  • Gluten free oats (1 cup)

  • Almond flour (½ cup)

  • Cinnamon (1 teaspoon)

  • Allspice (½ teaspoon)

  • Sea salt (½ teaspoon)

  • Dark chocolate chips (½ cup)

Directions:

  1. Make the 2 flax eggs: combine 2 tablespoons of ground flaxseed with 6 tablespoons of water and allow to sit for ~5-10 minutes

  2. Mix the 2 flax eggs with all of the wet ingredients in a bowl

  3. Mix all of the dry ingredients in a bowl

  4. Combine the dry and wet ingredients in a bowl

  5. Spoon the mixture into balls on a cookie sheet greased with coconut oil

  6. Bake at 425 for ~15 minutes

  7. Enjoy warm or store in the fridge or freezer in an air tight container!
